Pan Roasted Carrots

1 lb carrots, peeled and cut into sticks
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp fresh thyme, chopped
1 tbsp honey (optional)

Preheat your oven to 425°F (220°C).

In a large bowl, toss the carrot sticks with olive oil, salt, and black pepper until evenly coated.

Spread the carrots in a single layer on a baking sheet.

Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through.

If using, drizzle honey over the carrots in the last 5 minutes of roasting for added sweetness.
