Welcome to Taiji's kitchen. Today I'm going to show you how to make three different types of Japanese dressing, starting with ponzu dressing.

For the ponzu dressing, cut up the lemon and squeeze the juice into a bowl.

Add about 1 tablespoon of soy sauce to the lemon juice.

Next, add 1 teaspoon of mirin to take the edge off the sourness of the lemon.

Taste the mixture to check the flavor.

Now, let's prepare the sesame dressing. First, grind the roasted sesame seeds using a grinder or food processor until fragrant.

In a container, add 2 tablespoons of tahini and mix it up first before measuring.

To the tahini, add 1 tablespoon of vinegar, 2 tablespoons of mirin, and 2 tablespoons of soy sauce.

Next, add 1 teaspoon of sesame oil and the ground sesame seeds to the mixture.

If the dressing is too dense, add 1 tablespoon of water to thin it out, and mix well.

Now, let's make the onion soy sauce dressing. Start by peeling and grating a medium-sized onion.

Add the grated onion to a small pot with 2 tablespoons of soy sauce, 1 tablespoon of vinegar, and 0.5 tablespoon of mirin.

Cook the mixture on medium heat for about 2-3 minutes until the tanginess of the onion goes away.

Once cooked, remove from heat and let it cool.

After cooling, add 1 tablespoon of olive oil and 1-2 teaspoons of sesame oil to the onion mixture and mix well.

Prepare the vegetables: for the ponzu, I have lettuce and cherry tomatoes; for the sesame dressing, I have broccoli; for the onion soy sauce dressing, I have zucchini.

Cut up the vegetables as needed. For the broccoli and zucchini, you can steam them in the microwave for a few minutes.

Once the vegetables are ready, drizzle the ponzu sauce over the lettuce and cherry tomatoes, and add about 1 teaspoon of sesame oil.

Sprinkle some roasted sesame seeds on top for garnish.

For the broccoli, mix it with the sesame dressing.
