1 onion
1 small eggplant or half of a larger eggplant
1 zucchini
1 yellow summer squash
1 red bell pepper
2-3 cloves garlic
olive oil
salt

Heat a pan over medium heat and add enough olive oil to coat the bottom.

Chop 1 onion nice and small and add it to the pan.

Add salt to the onions and stir them around.

Chop about 1 small eggplant (or half of a larger one) and add it to the pan.

Cook the onion and eggplant for about 1-2 minutes until they start to soften.

Add a zucchini, a yellow summer squash, and a red bell pepper to the pan.

Cook the vegetables for about 5 more minutes, stirring occasionally.

Add 2-3 cloves of minced garlic to the pan.

Lower the heat to medium or medium-low and let the mixture cook for about 15 minutes, stirring occasionally.

Add chopped parsley and oregano to the mixture and stir it in.

Season to taste and serve as a side dish, on crustini, or crack 3-4 eggs on top and broil for about 30 seconds to 1 minute.
