Honey Glazed Carrots and Parsnips

500 g parsnips
olive oil

Peel 500 g of carrots and 500 g of parsnips, leaving the tops on.

Cut the carrots and parsnips in half lengthways, or into quarters if they are large.

Remove the woody core if desired.

Drizzle with olive oil and season with salt and pepper.

Mix together to coat evenly.

Lay them out on a baking tray, ensuring they are not overcrowded.

Place in the oven at 180° C for 40 minutes, turning halfway through.

After 40 minutes, drizzle with 2 tablespoons of runny honey.

Return to the oven for 5 more minutes.
