Fill a stockpot with cold water a little over halfway and season generously with sea salt.
Heat the stockpot on high heat.
Heat a large frying pan on medium-high heat for 3-4 minutes.
Slice 12 button mushrooms into thick slices (about a quarter inch thick).
Add 2 tablespoons (30 milliliters) of extra virgin olive oil to the frying pan.
Add the sliced mushrooms to the pan and mix to coat them in olive oil.
Place mushrooms in a single layer and let cook for about 1 minute, then mix again and repeat this process for about 5 minutes until browned.
Lower the heat to medium and remove the mushrooms from the pan, transferring them to a bowl and seasoning with sea salt and black pepper.
Roughly chop 6 cloves of garlic and thinly slice 2 shallots.
Add a tablespoon of extra virgin olive oil (15 milliliters) to the frying pan on medium heat.
Add the sliced shallots and chopped garlic to the pan and mix continuously for about 1 minute until garlic is aromatic and shallots are slightly translucent.
Add 1 tablespoon (8 grams) of all-purpose flour to the pan and mix continuously for about 2 minutes.
Measure out 1.5 cups (355 milliliters) of milk and add it to the pan, mixing continuously for 5-6 minutes until a creamy sauce forms.
Lower the heat to low and season the sauce with sea salt and black pepper.
Add the cooked mushrooms back into the sauce and mix well, keeping the sauce on low heat.
Once the water in the stockpot is boiling, add 225 grams (8 ounces) of tagliatelle and cook until al dente (about 7 minutes).
Once the pasta is cooked, add it directly into the sauce, shaking off excess water.
Mix the pasta with the creamy sauce until well combined, adding reserved pasta water if the sauce is too thick.
Transfer the pasta to a serving dish and grate manchego cheese over the top.
Sprinkle with finely chopped fresh parsley.
