Pour milk into a bowl and add sugar and an egg; mix well.
If using active dry yeast, dissolve it in warm milk and let it sit for 5-10 minutes until foamy; if using fresh yeast, crumble it in and dissolve it the same way.
Sift in the flour and add milk powder and salt; sift everything together to blend evenly.
Pour in the yeast mixture and combine; the dough will be sticky at first.
Add a little bit of vegetable oil to reduce stickiness and mix for 2-3 minutes.
Cover the bowl and let it rest for 30-40 minutes for dough hydration.
After the rest, wet your hands and use the stretch and fold method on the dough twice.
Cover again and let it rise for about 1 hour until doubled in size.
Punch down the dough and transfer it to a work surface; divide it into equal pieces (9 rolls today).
Roll each piece into a smooth ball, tucking the edges underneath.
Lightly spray the air fryer basket with vegetable oil and arrange the dough balls inside, leaving space between them.
Cover the basket and let the dough proof again for 30-40 minutes, checking for softness and lightness.
Before baking, brush the tops with an egg wash made from one egg yolk mixed with two tablespoons of milk.
Set the air fryer to 140°C (284°F) and bake for 15 minutes, checking at 12 minutes for doneness.
