1 ounce achiote
2 tablespoons vinegar
½ navel orange, juiced
1 tablespoon olive oil
¼ small white onion, diced
2-3 cloves garlic, minced
½ teaspoon Mexican oregano
Salt and pepper to taste
2 cups refried black beans
Pickled red onions
2-3 habaneros (optional)
Lime juice (optional)
Sliced avocado (optional)
2 cups masa harina
½ teaspoon salt
1 ½ cups warm water

Prepare the jackfruit by cooking it with vegetable broth powder, achiote, vinegar, orange juice, olive oil, diced onion, minced garlic, and Mexican oregano until tender.

In a separate pot, heat the refried black beans until warm.

Make the tortillas by mixing masa harina, salt, and warm water until a dough forms. Shape into small discs and cook on a hot skillet until lightly browned.
