Strip the meat off of smoked pork ribs and chop it into small pieces.
Mix the chopped rib meat with the crumbled cornbread in a bowl.
Brush the outside of the hollowed onions with olive oil or place a pat of butter on top of the filling if desired.
Remove the top and bottom of the onions, then scoop out the insides using a disher or melon baller.
Hollow out the onions carefully, ensuring the shell remains intact.
Fill the hollowed onions with the cornbread and rib meat mixture, pressing down gently to pack it in.
Prepare the grill for indirect cooking to bake the onions.
Place the stuffed onions on the grill and close the lid to bake them.
Cook the onions on the grill until they are tender and the filling is heated through, about 30-40 minutes.
