2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon paprika
4 slices bacon
1/2 cup light sour cream
1/4 cup avocado oil mayonnaise
2 tablespoons bacon grease
1 lime, juiced
1/2 teaspoon ancho chili powder
1 teaspoon bay seasoning
1 red bell pepper, diced
1 jalapeno, diced

Peel the husks off the sweet corn and remove stringy parts.

Season corn with olive oil, salt, black pepper, and paprika, mixing by hand to coat.

Heat a cast iron skillet over high heat and char the corn on all sides until browned.
