Split the vanilla bean lengthwise and scrape the seeds into the mixture.

Add the vanilla pod to the saucepan.

Increase heat slightly and bring the mixture to a gentle simmer.

Simmer for 10-15 minutes, stirring occasionally.

Remove from heat and let the mixture cool to room temperature.

Strain the honey through a fine mesh sieve to remove herbs and flowers.
