Spicy Pickled Garlic

This method of preservation dates back centuries, showcasing the art of pickling as a way to extend the shelf life of garlic while infusing it with bold flavors. Today, variations exist globally, with many cultures adding their unique spices and herbs to the pickling process.

Apple cider vinegar adds a fruity flavor while being healthier.

Honey offers a natural sweetness, while brown sugar is often less expensive.
Combine 1 cup of white vinegar, 1 cup of water, and 2 teaspoons of pickling or kosher salt in a saucepan.
Add 1 teaspoon of sugar if you prefer a hint of sweetness.
Set the pot on the stovetop and bring it to a simmering boil, stirring occasionally until the salt is dissolved.
Prepare a sanitized one quart mason jar with a new lid.
You will need about 4 cups of peeled whole garlic cloves to fill the jar.
Slice 3 habanero peppers into coin slices, resulting in about 9 slices.
Pour 1 teaspoon of crushed red pepper into the bottom of the jar.
Add a few slices of habanero to the bottom of the jar beneath the garlic.
Fill the jar halfway with garlic cloves, then add a few more pepper slices.
Continue packing the jar with garlic until it reaches the shoulders, leaving about half an inch of headspace.
Once the brine is ready and bubbling, pour it into the jar while it's still warm, leaving half an inch of headspace at the top.
Remove air bubbles by gently tapping the jar and wipe off the rim.
Seal the jar with a sanitized lid and screw it down until it's just finger tight.
Place the jar in the fridge and let it pickle for at least a week before consuming.
