Cut off the eyes from the potatoes to create a smooth base for cutting.

Using a mandolin, slice the potatoes thinly without peeling them to retain nutrients.

If you're low on time, you can parboil the potatoes for about 10 minutes, but do not cook them all the way before baking.

Grease a generic glass baking dish with olive oil, tilting it to coat the sides.

Layer the sliced potatoes in the baking dish, ensuring a relatively flat surface for even cooking.

Hard boil 4 eggs for 10 minutes, then place them in an ice bath to cool. Keep 2 eggs raw for the filling.

Slice the hard-boiled eggs and add them to the layered potatoes, along with diced ponetta.

Add a final layer of potatoes on top of the eggs and ponetta.
