Cut the cabbage into quarters and slice away the core.

Slice the cabbage quarters into 1/2-inch strips.

Transfer the cabbage to a large rimmed baking sheet.

Toss the cabbage with 2 tablespoons of oil, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper.

Roast in a 425-degree Fahrenheit oven until the cabbage begins to brown, about 15 minutes.

Remove the baking sheet, toss the cabbage, and continue to roast for another 5 to 10 minutes or until the cabbage is tender and caramelized in spots.

Squeeze a little fresh lemon juice on top just after taking it out of the oven.
