Slice andouille sausage into half-round shapes.
Heat a little oil in a large pot over medium heat.
Add sliced sausage to the pot and brown until crispy, rendering out the fat.
Season sausage with a little Cajun seasoning while cooking.
Remove sausage with a slotted spoon, leaving the drippings in the pot.
Toss chicken with Cajun seasoning and add to the drippings in the pot.
Cook chicken until it develops some color, but not fully cooked.
Add chopped bell peppers, onion, celery, and garlic to the pot and sauté until softened.
Add salt to help soften the vegetables during cooking.
Add pepper, crushed red pepper, hot sauce, Worcestershire sauce, and crushed tomatoes to the pot.
Return the browned chicken and sausage to the pot and cook for a few more minutes.
Add fresh thyme to the mixture.
Stir in plain white rice, coating the grains with the mixture.
Reduce heat to a light simmer, cover, and cook for about 20 minutes or until all liquid has absorbed.
