Spread the sautéed onion and garlic mixture over the potatoes.
Season with salt, black pepper, and thyme.
Add the remaining potato slices on top.
Pour heavy cream evenly over the layered potatoes.
Sprinkle cheese on top of the dish.
Cover with foil and bake for 30 minutes.
Remove the foil and bake for an additional 15-20 minutes until golden and crispy.
Let it cool for a few minutes before slicing.
Serve warm as a side dish.
