Spicy Cucumber and Watermelon Salad

Fill a small bucket with ice water and place cucumbers in it to chill.
Cut off both ends of a seedless red watermelon and stand it up to cut into cubes.
Remove the rind from the watermelon and cut it into approximately one-inch chunky pieces.
Chill the cubed watermelon in the refrigerator.
Finely chop red onion and thai chilies for the dressing.
Juice two limes and add the juice to the chopped onion and chilies to marinate.
Add salt to the onion mixture to draw out liquid and enhance flavor.
In a pan, heat a quarter cup of vegetable oil over medium heat and add raw skinned peanuts.
Toast the peanuts for about three minutes, stirring occasionally until they turn light brown.
Remove the peanuts from heat and season them with sugar and lime zest while they are still warm.
Smash the cucumbers using a rolling pin or meat mallet to create craggy edges for better dressing absorption.
Combine the smashed cucumbers, chilled watermelon, marinated onion mixture, and toasted peanuts in a large bowl.
Toss everything together gently to combine and serve immediately.
