Add 1 teaspoon of activated dry yeast to a bowl.
Add 2 teaspoons of sugar and 1 teaspoon of kosher salt to the bowl.
Pour in 1.5 cups of warm water and mix for about a minute.
Let the mixture sit for 5 minutes to ferment.
Mix again to ensure everything is combined.
Add 3 cups of whole wheat flour to the mixture and mix with a spatula for about a minute.
Cover the bowl with Saran Wrap and a cloth, let it sit for about an hour.
After an hour, mix the dough again, pushing everything to the center.
Cover the bowl again and let it sit for an additional hour.
Flour a board and place the dough on it, shaping it into a round ball.
Place the dough in a bowl lined with parchment paper and sprinkle flour on top.
Score the top of the dough with a sharp knife in a cross pattern.
Preheat a Dutch oven to 450°F.
Place the dough in the Dutch oven and bake for 35 minutes at 450°F.
Remove the parchment paper and bake for an additional 5 minutes without the lid.
