Dissolve orange JELL-O in boiling water.

Drain crushed pineapple, reserving juice.

Add water to reserved pineapple juice to make slightly less than 1 cup.

Add to JELL-O mixture, along with vinegar and salt.

Stir well and pour into nice serving bowl.

Cover with plastic wrap and chill until partially set.

Fold in crushed pineapple, shredded carrots, and chopped pecans (pecans are optional).

Cover with plastic wrap and chill until firm.

Spoon onto lettuce leaves with some mini carrots sticks and a sprig of mint, if desired.
