Process 4 cups of quick oats in a food processor until ground into flour, using a coffee grinder for speed.
Measure the oat flour before adding it to a large bowl to ensure you have 4 cups.
Preheat the oven to 350°F (175°C).
Butter a 9x5 inch loaf pan.
To the oat flour, add 1 teaspoon of salt and 2 tablespoons of baking soda, and combine using a whisk, spatula, or spoon.
Add 2 and 1/4 cups of sour cream to the oat flour mixture.
Add 2 tablespoons of molasses to the mixture, or mix the sour cream and molasses in a separate bowl before combining.
Mix all ingredients together until well combined; the batter will be very thick.
Spread the batter evenly into the prepared loaf pan, using wet hands to help smooth it out.
Bake in the preheated oven for 45 to 50 minutes.
Check for doneness by inserting a toothpick in the center; it should come out clean.
Let the bread rest in the pan for 10 minutes before turning it out onto a cooling rack.
Allow the bread to cool completely before slicing.
