Salade de lentilles

1 cup green or brown lentils
3 cups water
1/2 tsp salt
1/4 cup red onion, finely chopped
1/2 cup cherry tomatoes, halved
1/4 cup cucumber, diced
1/4 cup bell pepper, diced
1/4 cup fresh parsley, chopped
2 tbsp olive oil
1 tbsp red wine vinegar
1 tsp Dijon mustard
to taste salt and pepper

Rinse the lentils under cold water and drain.

In a medium saucepan, combine the lentils, water, and 1/2 tsp salt. Bring to a boil over medium-high heat.

Reduce the heat to low and simmer for about 20-25 minutes, or until the lentils are tender but not mushy.

Drain the lentils and let them cool to room temperature.

In a large bowl, combine the cooled lentils, red onion, cherry tomatoes, cucumber, bell pepper, and parsley.
