Spoon the mashed mixture back into the potato skins.
Top each potato with cheddar cheese, bacon, and green onions.
Return to the oven and bake for an additional 10-15 minutes until cheese is melted and bubbly.
Remove from oven and garnish with chives and additional toppings as desired.
