Vintage Circus Peanut Salad Recipe from the 1940’s

Sunflower seeds are nut-free and still add crunch.

Cut up 18 circus peanuts into small pieces.

Add 1/8 cup of boiling hot water to the cut circus peanuts and microwave for 45 seconds on high.

Stir the circus peanuts and microwave for another 45 seconds until they expand.

In a separate bowl, add 1/2 cup of boiling water to a small package of orange Jell-O and stir until dissolved.

Pour in 8 oz of crushed pineapple (with juice) into the Jell-O mixture and stir.

Combine the Jell-O mixture with the circus peanuts and stir everything together.

Refrigerate the mixture for about 45 minutes until it reaches a soft set.

Add about half a container of thawed Cool Whip to the mixture and mix until well combined.

Pour the mixture into a casserole dish and refrigerate for 2 to 3 hours for a hard set.

After 2 and a half hours, slice the set salad and serve.

Decorate the top with another circus peanut.
