2 cups zucchini, sliced
2 cups bell peppers, chopped
1 cup red onion, chopped
2 cups cherry tomatoes
1/4 cup olive oil
2 tsp dried oregano
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
1/4 cup feta cheese, crumbled (optional)
