Chop 1 green pepper and 1 medium sweet onion.
Add the chopped green pepper and onion to the skillet with the bacon and sauté until softened.
Season the vegetables with about 1 teaspoon black pepper and 0.5 teaspoon salt.
Transfer the bacon and vegetable mixture to a bowl.
Boil 1.5 to 2 pounds of potatoes until they are just about halfway tender.
Drain the potatoes and add them to the skillet with 2 tablespoons of cooking oil and a little pad of butter.
Cook the potatoes over high heat to get some color on them, stirring occasionally.
Add 1 heaping teaspoon of minced garlic and some chives to the skillet and stir to combine.
Transfer the browned potatoes back to the bowl with the bacon and vegetables.
Stir in 1 cup of medium cheddar cheese, 0.25 cup of sour cream, and 0.25 cup of ranch dressing.
Add about 0.33 stick of melted butter to the mixture and stir everything together.
