1

Microwave 1 cup of water for 30 seconds.

2

Add 1 tablespoon of powdered sugar to the warm water and mix well. Cover and let sit for 5 minutes until doubled in size.

3

In a mixing bowl, add 2 cups of gluten-free baking flour.

4

Add the yeast mixture to the flour.

5

Add 1 tablespoon of gluten-free milk powder, 1 teaspoon of salt, 2 tablespoons of cooking oil, and 1 tablespoon of apple cider vinegar. You can substitute with lemon juice or white vinegar if needed.

6

Mix everything well, then add milk little by little until combined.

7

Transfer the mixture to a larger vessel for better mixing.

8

Using a hand mixer with a dough hook attachment, mix on low speed for 30 seconds, scraping down the sides with a spatula.

9

Add water little by little and beat on medium speed until the dough pulls away from the sides of the bowl, about 2 minutes.

10

Add 1 tablespoon of baking powder and more water as needed, mixing until you have a workable dough that is soft and sticky. Knead for 5 to 10 minutes on high speed.

11

If you don't have a stand mixer, use a large mixing bowl and a wooden spoon or spatula to mix the dough together by hand.

12

Grease a baking pan (can be rectangular or oval; the creator uses a heart-shaped pan).

13

Apply water to your hands, then divide the dough into 4 to 6 equal pieces, shaping each into a smooth ball by hand.

14

Arrange the dough balls in the prepared baking pan, smoothing any cracks with water if necessary.

15

Cover the shaped rolls with cling wrap and allow to rise until doubled in size, about 1 hour.

16

After 1 hour, remove the cling wrap and prepare a milk wash by mixing 2 tablespoons of milk with 1/8 teaspoon of sugar.

17

Brush the milk wash on top of the rolls.

18

Bake in a preheated oven at 180°C (356°F) for 25 to 30 minutes or until golden brown.

19

If the tops brown too quickly, loosely cover the pan with aluminum foil (the creator did not need this).

20

After baking, brush some butter on top of the rolls and allow them to cool for a few minutes before serving.

21

Remove the rolls from the baking pan and place them on a cooling rack.

22

Cover with a wet cotton cloth to prevent drying out.

23

After about 20 minutes, the dinner rolls are ready to serve.
