Double Down Burrito

Cut large chicken breasts into thinner pieces by butterflying them.
Remove tenders from the chicken if desired and keep them for later use.
Prepare the coating for the chicken by mixing flour, pink Himalayan salt, pepper, and optional sage.
Heat oil to 320-340°F for frying the chicken.
Dip the chicken pieces in the flour mixture, then in the egg wash (buttermilk), and back into the flour for a thick coating.
Fry the chicken pieces in hot oil, three at a time, ensuring they do not stick together.
Prepare the sauce by mixing mayonnaise, ketchup, garlic, and optional Tabasco sauce.
Cook pre-cooked bacon until crispy.
Assemble the Double Down by layering fried chicken, bacon, cheese, and sauce.
