Instructions

  1. 1Preheat the oven to 400°F (200°C).
  2. 2In a mixing bowl, combine cooked chicken, cream cheese, cheddar cheese, black beans, green onions, garlic powder, cumin, chili powder, salt, and pepper.
  3. 3Mix until well combined.
  4. 4Warm corn tortillas in a dry skillet over medium heat until pliable, about 30 seconds per side.
  5. 5Spoon a portion of the chicken mixture onto each tortilla and roll tightly to form taquitos.
  6. 6Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.

  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup salsa
  • 4 large flour tortillas
  • 1/4 cup sour cream (optional)
  • 1/4 cup chopped cilantro (optional)
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. 1In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, cheese, salsa, cumin, chili powder, salt, and pepper. Mix well until all ingredients are evenly combined.
  2. 2Lay a flour tortilla flat on a clean surface. Spoon about 1/4 of the chicken mixture onto the center of the tortilla.
  3. 3Fold the sides of the tortilla over the filling, then roll it up from the bottom to the top to form a burrito. Repeat with the remaining tortillas and filling.
  4. 4Preheat a skillet over medium heat. Place the burritos seam-side down in the skillet and cook for about 2-3 minutes on each side until golden brown and crispy.
