Place eggs in a saucepan and bring water to a boil over medium heat, remove from heat, cover with a lid for 12-14 mins.

Transfer the cooked eggs to an ice bath so they stop cooking.

Peel the eggs.

Cut eggs in half lengthwise. Gently remove yolks.

Press the yolks through a sieve by a spoon.

Take out part of mimosa yolks for garnish. Now make the filling, Add the mayonnaise and mustard and honey to the yolks in the bowl, season with salt and pepper and some parsley. Mix well.

Ready to Assemble the eggs. Fill the whites with the yolk mixture. Sprinkle the mimosa yolk for garnish, All down, enjoy.
