Bake turkey bacon at 400° F for 15 to 20 minutes.
Let the bacon cool and chop it.
In a bowl, combine 1 15oz can of tomato sauce, 2 tbsps of maple syrup or sugar-free maple syrup, 1/2 teaspoon of optional liquid smoke, 1 teaspoon of Worcestershire sauce, 1 tsp of minced garlic, 1/2 teaspoon of sea salt, 1/4 teaspoon of black pepper, 1 teaspoon of Dijon mustard, 2 tbsps of apple cider vinegar, and 1 tsp of smoked paprika to make the barbecue sauce.
Mix the barbecue sauce thoroughly.
In the slow cooker, add three 15oz cans of rinsed and drained pinto beans.
Add one small finely diced white sweet onion.
Add eight slices of cooked chopped turkey bacon.
Pour the barbecue sauce over the ingredients in the slow cooker and mix everything to combine.
Place the lid on the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
Stir before serving and enjoy.
