Prep the carrots by using a slicer to remove the dirty skin and edges, then wash them.
Slice the carrots into medium shapes on a chopping board.
Melt 8 tablespoons of butter in a skillet until completely melted.
Add 1/2 cup of brown sugar to the melted butter and stir gently, cooking for about 1-2 minutes until it starts to bubble.
Prepare a cornstarch solution by mixing 1 tablespoon of cornstarch with 1/2 cup of water.
Add the cornstarch solution to the bubbling mixture to thicken the glaze, or omit if a thinner glaze is desired.
Add about 5 tablespoons of water to thin the glaze if necessary.
Add spices: 1/4 teaspoon each of ground cinnamon, ground nutmeg, ground allspice, and ground ginger, along with 1 teaspoon of vanilla extract and ground black pepper (optional).
Add the sliced carrots to the glaze and ensure they are well saturated with it.
Cook the carrots until tender, testing with a fork for desired softness.
