Loaded Baked Potato Fries

4 large russet potatoes
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese
1/2 cup cooked bacon bits
1/4 cup sour cream
1/4 cup chopped green onions

Preheat your oven to 425°F (220°C).

Wash and scrub the russet potatoes thoroughly. Cut them into thin fry shapes.

In a large bowl, toss the potato fries with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.

Spread the fries in a single layer on a baking sheet lined with parchment paper.

Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crispy.

Remove the fries from the oven and sprinkle the shredded cheddar cheese and bacon bits evenly over the top.

Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Remove from the oven and drizzle with sour cream and sprinkle with chopped green onions before serving.
