1 lb mutton, diced
2 cups all-purpose flour
1/2 cup butter, chilled and diced
1/4 cup cold water
1 onion, chopped
2 carrots, diced
2 potatoes, diced
2 cloves garlic, minced
1 tsp thyme
1 tsp rosemary
1/2 tsp salt
1/2 tsp black pepper
1 egg, beaten (for egg wash)

Preheat the oven to 400°F (200°C).

In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.

Stir in the cold water, a tablespoon at a time, until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.

In a skillet, heat some oil over medium heat. Add the onions and garlic, sauté until translucent.

Add the diced mutton, carrots, and potatoes. Cook until the mutton is browned on all sides.

Stir in the thyme, rosemary, salt, and pepper. Cook for another 5 minutes, then remove from heat and let cool.

Roll out the dough on a floured surface to fit your pie dish. Place half of the dough in the dish, pressing it into the corners.

Fill the pie crust with the mutton mixture, then cover with the remaining dough. Seal the edges and cut slits in the top for steam to escape.
