Season 4 lbs of trimmed chicken breast generously with South of the Border rub or your favorite barbecue rub, ensuring complete coating on all sides.

In a foil pan, combine 2 chopped onions, 2 chopped bell peppers, 1 jalapeno, and 3 cloves of garlic.

Add a couple tablespoons of olive oil and a generous coating of South of the Border rub to the vegetables, mixing well.

Pour about 2 cups of chicken broth into the foil pan with the vegetables and add a few drops of your favorite hot sauce.

Preheat the Lone Star grills pellet smoker to 275°F.

Once preheated, place the chicken on the top shelf of the smoker and the foil pan with vegetables on the bottom shelf.

Cook for about 1 hour to develop smoke flavor and get the chicken to about 160°F in the center.

Transfer all the chicken into the foil pan with the vegetables, cover with foil, and return to the smoker to tenderize for approximately 90 minutes.

After 90 minutes, the chicken should be pull-apart tender. Mix it in with the vegetables and cover it up again.

Return the mixture to the smoker for about one more hour to soak up the flavors.

Remove from the smoker and let it cool before serving.
