Mention that you can make a large loaf or use small silicone molds for fun.
Sift 300 g of white flour and 100 g of brown flour into a bowl.
Cut 25 g of cold butter into cubes and rub it into the flour until no large lumps remain.
Add 15 g of salt and 1 tablespoon of sugar to the flour mixture and mix by hand.
Add 1 packet of quick drying yeast to the mixture.
Slowly pour in 320 ml of warm water while mixing with a spoon until combined.
Transfer the dough to a floured surface and knead for about 10 minutes until it is not sticking to your hands.
Place the kneaded dough into a bowl greased with olive oil and cover with cling film, oiling the top of the dough to prevent sticking.
Let the dough rise for 1 hour in a warm place.
After 1 hour, punch down the dough and transfer it to a floured surface.
Knead the dough for a few more minutes before dividing it into small pieces for the molds.
Grease each silicone mold with a small amount of oil before placing the dough inside.
Cover the molds with cling film and let them rise for another 30 minutes in a warm place.
After 30 minutes, remove the cling film and top some loaves with sesame seeds and pumpkin seeds.
Preheat the oven to gas mark 6.
Place the molds in the oven and bake for about 30 minutes, checking for doneness by tapping the bottom for a hollow sound.
Remove the loaves from the oven and let them cool before slicing.
