Finally, coat the onion ring in the panko breadcrumb mixture, pressing gently to adhere.
Place the coated onion rings on the prepared baking sheet in a single layer.
Drizzle olive oil over the onion rings to help them crisp up during baking.
Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown.
Remove from the oven and let cool slightly before serving.
Garnish with chopped parsley for added flavor.
