Cut 3 medium-sized potatoes that have been peeled, washed, and patted dry into small pieces that are half an inch thick.
Transfer the cut potatoes into a large bowl and fill it with cold water just enough to barely cover the potatoes.
Let the potatoes sit in the water for at least 30 minutes to help release some of the starch.
Drain the potatoes into a colander and rinse them under cold running water to remove excess starch.
Shake off excess water and transfer the potatoes into a dishcloth, patting them completely dry.
In the same bowl, add the potatoes back in and drizzle with 1 tablespoon of extra virgin olive oil, seasoning with sea salt and freshly cracked black pepper, then toss to coat.
Line a baking tray with parchment paper and add the potatoes in a single flat layer.
Preheat the oven to 210 degrees Celsius (410 degrees Fahrenheit) for about 20 minutes, then add the potatoes to the oven to bake.
While the potatoes are cooking, prepare a spicy garlic mayonnaise by mixing 1/2 cup of low-fat mayonnaise with 2 finely grated cloves of garlic, 1 teaspoon of fresh lemon juice, and 1/2 teaspoon of hot smoked Spanish paprika, seasoning with sea salt and pepper, then whisk until creamy.
After about 45 minutes, check the potatoes by piercing them with a toothpick; if it goes in easily, they are ready.
Transfer the cooked potatoes to a serving dish, drizzle with the spicy garlic mayonnaise, and sprinkle with finely chopped parsley.
