Prepare 2 cups of sliced carrots, cutting them diagonally about 1/4 inch thick.
Remove the strings from 12 oz of snow peas.
Boil 3 cups of water in a Dutch oven.
Add the sliced carrots to the boiling water and boil for 12 minutes.
Add the snow peas to the boiling water and boil for 1 minute until vibrant green.
Drain the carrots and snow peas in the sink and set aside.
In a braiser on medium-low heat, add 4 tablespoons of butter and 1 teaspoon of freshly grated ginger, cooking for 1 minute.
Add 1/2 teaspoon of corn starch to the butter and ginger, whisking gently.
Stir in 2 1/2 tablespoons of honey and whisk until combined.
Add the boiled carrots and snow peas to the mixture, along with cayenne pepper, salt, and black pepper to taste.
Toss everything together and cover with a lid, simmering for about 1.5 minutes.
Remove the lid and transfer the mixture to a serving dish.
Sprinkle chives on top before serving.
