Mango and Corn Salsa

juice from 1 lime
1 Tbsp. honey
1/4 tsp. chili powder
1/4 tsp. table salt
2 ripe mangos, peeled and cut into 1/4-inch pieces
2 ears of corn, kernels cut off cobs
1/2 cup chopped cilantro
1/4 cup finely chopped red onion
1 medium jalapeno, finely chopped (seeds removed, if desired)

Stir together lime zest, lime juice, honey, chili powder and salt in a medium mixing bowl.

Add chopped mangos, kernels from corn cobs, cilantro, red onion and jalapeno and gently stir until well combined.

Serve immediately or store in an airtight container for up to 3 days.
