1 cup medium-sized brown lentils
1 liter water
1 clove garlic
1 bay leaf
salt
freshly ground pepper

Add 1 cup of medium-sized brown lentils and 1 liter of water to a pot.

Place the pot over high heat and bring to a boil.

As soon as it starts to boil, remove from heat and drain the water, discarding it.

Transfer the lentils back to the pot and add another liter of fresh water.

Add 1 clove of garlic and 1 bay leaf, along with salt and freshly ground pepper.

Place the pot back over high heat and bring to a boil again.

Cook for 10 to 15 minutes, checking for doneness based on the size of the lentils.

When ready, remove from heat and drain the lentils again, removing the garlic and bay leaf.

Sprinkle with extra virgin Greek olive oil and a splash of white wine vinegar before serving.
