Tomato Confit Pasta Salad

2 cups cherry tomatoes
1/4 cup olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried oregano
1/2 tsp garlic powder
8 oz pasta (fusilli or penne)
1/4 cup fresh basil, chopped
1/4 cup feta cheese, crumbled (optional)
1/4 cup balsamic vinegar

Preheat the oven to 300°F (150°C).

In a baking dish, combine cherry tomatoes, olive oil, salt, black pepper, oregano, and garlic powder. Toss to coat the tomatoes evenly.

Roast the tomatoes in the preheated oven for about 1 hour, until they are soft and slightly caramelized.

While the tomatoes are roasting, cook the pasta according to package instructions until al dente. Drain and set aside.
