Steam bok choy leaves over a hot boiling pan for about 2-3 minutes until they shrink slightly.
Chop garlic and spring onions, then add spring onions to the chopped garlic.
Add 1 tablespoon of finely chopped onion and garlic powder to the mixture.
Add 1 tablespoon of light soy sauce to the mixture.
Add 0.5 tablespoon of peanut butter for the peanut flavor.
Heat 2 tablespoons of olive oil and add it to the dressing mixture to improve consistency.
Mix all the dressing ingredients well to combine flavors and add salt to taste.
Plate the steamed bok choy and cut the leaves into small pieces or leave them long if preferred.
Add the peanut sauce on top of the bok choy and mix or serve it on top without mixing.
Garnish with chopped spring onion and white onion before serving.
