1 whole rotisserie chicken
3 cups water
2 tablespoons chicken bouillon
1 avocado
1/4 cup cilantro
1/4 cup sour cream
1/4 cup cream
1/4 cup tomato paste
1 onion
2 cloves garlic
1 teaspoon cumin
1 tablespoon oil
1 lime

Start by cooking rice in a pot with water and chicken bouillon.

In a food processor, blend together 1/4 cup tomato paste, 1 onion, 2 cloves garlic, 1 teaspoon cumin, and a little water until smooth.

Heat 1 tablespoon oil in a pan, add the blended mixture, and cook until fragrant.

Add 3 cups of water and 2 tablespoons of chicken bouillon to the pan, stir, and bring to a boil.

Cover the pan and let it simmer on low for 20 minutes until the rice is cooked and fluffy.

While the rice is cooking, prepare the avocado cream sauce by blending 1 avocado, 1/4 cup cilantro, 1/4 cup sour cream, and 1/4 cup cream together until smooth.

Taste the avocado cream sauce and adjust seasoning if necessary, adding salt to taste.

Once the rice is done, fluff it with a fork and serve it with shredded rotisserie chicken and avocado cream sauce.
