Crispy Japanese Potato Sticks

3–4 large russet potatoes (about 3 ½–4 cups mashed)
½–⅔ cup potato starch
1 tsp onion powder
1 tsp garlic powder
1 tsp dried parsley
2 tsp paprika powder
salt, to taste
½ cup freshly grated Parmesan
2 Tbsp fresh parsley, chopped
neutral oil for frying
Optional: garlic mayo for dipping

Peel the potatoes and boil them in salted water until completely tender. Drain and let them steam dry briefly. Mash thoroughly until very smooth with no lumps remaining.

Add the potato starch, paprika and garlic powder, onion powder and dried parsley, and salt to the mashed potatoes. Mix with your hands until well combined. Transfer the potato mixture to a piping bag or large zip-top bag.

Pipe long fry-shaped strips directly into hot oil heated to 350°F. Fry until golden brown and crispy, about 3–4 minutes. Remove and drain on paper towels. Immediately sprinkle with freshly grated Parmesan and chopped parsley. Serve hot with garlic mayo on the side.
