For this recipe, we need peeled cuy and 3 tablespoons of aliño casero, 1 teaspoon of achiote, and salt to taste.

For the peanut sauce, we need salt to taste, crushed garlic, black pepper, 2 tablespoons of peanut butter, 1 teaspoon of achiote, 1 white onion, and 3 sprigs of cilantro, and 2 pounds of potatoes.

Start by opening the neck of the cuy to prepare it better on both sides.

Season the cuy with salt for color, ensuring it is covered evenly.

Apply the aliño casero all over the cuy for flavor.

Place the cuy in a roasting pan and let it rest for about 3 hours; preparing it the day before is better for flavor concentration.

After 3 hours, cover with aluminum foil and place in a preheated oven at 180°C (356°F).

While the cuy is cooking, peel the potatoes and place them in a pot to cook, covered.

After more than an hour, turn on the grill to brown the cuy for about 10 minutes.
