Welcome to the channel, today we're making Sweet and Tangy BBQ Sauce inspired by Sunny's Barbecue.
Start with 3 quarts of ketchup as the base, aiming to quadruple the recipe.
Add 1/4 cup of brown sugar, but consider increasing it later.
Measure out 2 cups of Worcestershire sauce, using a large measuring cup.
Pour in 1 1/2 cups of apple cider vinegar, adding regular vinegar to make up for the shortage.
Add 1/4 cup of yellow mustard, using ground mustard to supplement if needed.
Whisk together the mustard and vinegar, ensuring it's well combined.
Add 3 tablespoons of garlic powder for flavor, opting for smooth sauce without chunks.
Transfer the mixture to the stove and let it simmer for about 30 minutes.
During simmering, add a couple of squirts of liquid smoke for flavor enhancement.
After simmering, taste the sauce and adjust the sweetness by adding 3 more cups of brown sugar if too tangy.
Add more liquid smoke, approximately 2 ounces, to deepen the flavor.
To reduce acidity, add 1 teaspoon of baking soda, watching it bubble up, then add another teaspoon if needed.
Continue simmering for about 2 hours to thicken the sauce and balance flavors.
Prepare jars for canning by heating up the water bath canner and ensuring jars are clean.
Fill jars with the sauce, leaving an inch of headspace to prevent overflow during processing.
Clean the rims of the jars with vinegar for a good seal.
Place lids and rings on jars, tightening them fingertip tight.
Load jars into the canner, using a rack to prevent them from bouncing around.
Canning process will take 20 minutes for the jars to seal properly.
Remove jars from the canner once done and let them cool.
