Rinse lentils under cold water and drain.
Combine lentils with water in a pot and bring to a boil.
Reduce heat and simmer until tender, about 20-25 minutes.
Drain lentils and set aside to cool slightly.
Heat olive oil in a skillet over medium heat.
Add diced red onion, carrot, and celery; sauté until softened, about 5-7 minutes.
Stir in minced garlic and diced red bell pepper; cook for another 2-3 minutes.
Add cooked lentils to the skillet and stir to combine.
Fold in fresh spinach and cherry tomatoes; cook until spinach wilts, about 2 minutes.
Remove from heat and drizzle with lemon juice.
Sprinkle with crumbled feta cheese and chopped parsley.
Season with cumin, salt, and black pepper to taste.
Toss gently to combine all ingredients.
