Sprinkle salt and black pepper on thin sliced sirloin.
Spread yellow mustard and German stone ground mustard evenly over the sirloin.
Spread fine diced onion and pieces of bacon on top of the mustard.
Roll the sirloin from the narrow end towards the thick end.
Cut butcher's twine and wrap it around the rolled sirloin.
Sear the wrapped rouladen in a cast iron skillet with beef tallow until browned.
Remove the rouladen and set aside to cool before removing the twine.
Deglaze the skillet with beef stock to capture the flavors.
Place the rouladen back into a baking dish and pour in the deglazed liquid.
Cover with foil and braise in the oven at 275°F for about three hours.
Boil potatoes with skins on until tender, then drain and let sit for about an hour.
Peel the skins off the boiled potatoes and rice them into a bowl.
Add flour and salt to the riced potatoes, mixing to form a dough.
Shape the dough into balls slightly larger than a golf ball.
Flour the dough balls and prepare them for cooking.
Drop the dough balls into boiling water and cook until they float, about 10 minutes.
Prepare gravy by adding beef stock to the serving tray and bringing it to a boil.
Mix flour with water to create a slurry and stir it into the boiling stock to thicken.
Let the gravy simmer for about 10 minutes to remove the raw flour taste and add Dano's seasoning.
Return the rouladen to the gravy and keep it warm until serving.
