Wash and clean the golden beets thoroughly.
Using a sharp knife, cut off the stems and roots of the beets.
Peel the beets using a sharp knife to remove the outer layer.
Cut the peeled beets into quarters.
In a bowl, add the quartered beets, a generous amount of olive oil, about ½ teaspoon of salt, and ½ teaspoon of black pepper, and toss to coat.
Line a baking dish with parchment paper and spread the beets evenly in the dish.
Place the baking dish in a preheated oven at 400°F (200°C) and roast for about 30 minutes until fork tender.
Once roasted, add a little butter on top of the beets before serving warm or refrigerating for later use in a salad.
For the salad, start with a bowl of washed mixed greens.
Add fresh blueberries, orange slices, walnuts, and generous portions of the roasted beets to the salad bowl.
Finish with crumbled goat cheese and lightly toss with vinaigrette dressing.
