Put on an apron and ensure hands are clean.
Gather ingredients: salt, unsalted butter, warm water, mozzarella cheese, queso costeño, and precooked white cornmeal.
In a mixing bowl, combine the precooked white cornmeal and salt.
Add queso costeño to the mixture and incorporate well.
Add mozzarella cheese to the mixture and mix thoroughly.
Incorporate unsalted butter into the mixture until well combined; the texture will feel sandy.
Gradually add warm water to the mixture, stirring until a soft, moist dough forms.
Cover the dough and let it rest for at least 10 minutes to prevent it from drying out.
Prepare a plate with extra mozzarella cheese and a bowl of water for shaping the arepas.
Form the dough into small, thick discs, ensuring they are filled with cheese and the edges are sealed to prevent cracking.
Preheat a skillet over medium heat and add butter to the skillet.
Once the skillet is hot, place the arepas in the skillet and cook for 3 minutes on one side.
Flip the arepas and cook for another 3 minutes until golden brown and fluffy.
Remove the cooked arepas from the skillet and repeat the process with the remaining dough.
