In a medium bowl or large resealable bag, whisk together 1/4 cup olive oil, 2 tablespoons balsamic vinegar, 2 minced garlic cloves, 1 tablespoon soy sauce, 1 teaspoon dried oregano, 1/2 teaspoon dried thyme, 1/4 teaspoon black pepper, and optional red pepper flakes.

Add the cleaned mushrooms to the bowl or bag with the marinade and toss gently to ensure they are evenly coated.

Cover the bowl or seal the bag and refrigerate for at least 30 minutes, or up to 4 hours or overnight for best results.

Preheat the grill to medium-high heat, around 375 to 400°F (190 to 200°C). Lightly oil the grill grates or a grill basket.
