Prepare the mushrooms by gently wiping them clean with a damp cloth or paper towel. Do not rinse them under running water.
Trim the very ends of the stems if they are dry or woody. Leave smaller mushrooms whole. For larger cremini, slice them in half if desired.
If using portobello caps, scrape out the gills for a milder flavor and slice into 1-inch thick pieces.
In a medium bowl or large resealable bag, whisk together 1/4 cup olive oil, 2 tablespoons balsamic vinegar, 2 minced garlic cloves, 1 tablespoon soy sauce, 1 teaspoon dried oregano, 1/2 teaspoon dried thyme, 1/4 teaspoon black pepper, and optional red pepper flakes.
Add the cleaned mushrooms to the bowl or bag with the marinade and toss gently to ensure they are evenly coated.
Cover the bowl or seal the bag and refrigerate for at least 30 minutes, or up to 4 hours or overnight for best results.
Preheat the grill to medium-high heat, around 375 to 400°F (190 to 200°C). Lightly oil the grill grates or a grill basket.
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated mushrooms onto the skewers, leaving space between each mushroom, or place them directly in a grill basket in a single layer.
Place the mushrooms on the preheated grill and grill for 8 to 12 minutes, turning occasionally until they are tender, browned, and slightly caramelized. Adjust cooking time based on mushroom size and grill heat.
Once cooked, remove the mushrooms from the grill, taste, and add salt if needed. Serve immediately as a side dish, over rice or quinoa, in wraps, or as a topping for burgers or salad.
